Hold on to your hats folks because I’m about to post some decadent desserts, most of them have theone ingredient that we absolutely love…and that is”MINT”.  

 

THE ULTIMATE CHOCOLATE MINT COOKIE

Ingredients

1 bx chocolate cake mix (any brand will do, but a fudge or dark chocolate cake mix works best)
1/4 c water
1/4 c vegetable oil
1 lg egg
1 c andes brand chocolate mint baking morsels

Directions

1 Preheat oven to 375 degrees. Open boxed cake mix into a large bowl and add water, oil and egg. Mix together well. Add the chocolate mint morsels and mix well.
2 Spray cookie sheets with nonstick spray. Place dough by the spoonfull on cookie sheets, 2 inches apart.

(I don’t spray my cookie sheets. I bake on parchment… I like it better. No greasing of pans, no messy clean-up!! And the cookies scorch less when baking on parchment paper.)
3 Bake at 375 degrees for 12-15 minutes. (Each oven is different. Check them after 12 mins.)

Note: If you cannot find the Andes Brand of chocolate morsels, use crushed peppermint candies. It also needs to be said this is a wonderful cookie recipe if you want to make a variety…Just use whatever flavor of cake mix you like and add whatever you want to it…choc. chips, butterscotch chips, nuts, raisins, etc. But I think you will find the chocolate cake mix and the Andes morsels produce an exciting and rich flavor!

I am all about substitutions, if a recipe calls for a ingredient there are dozens of ingredients you can substitute for the called-for ingredient. I like summer because I love cooking outdoors, swimming. It's just the fresh air that makes everyone want to get outside and do something. I love the air especially after the rain.... that nothing compares to that.
