Most of these wonderful desserts are contributions from members from JustaPinch recipe club whihc I am a member of. I love that site and most of my recipes are from that site.
This cake is lite and the Icing melts in your mouth.
MANDARIN ORANGE CAKE
1 18 ounce yellow cake mix
11 oz can mandarin orange with juice
4 eggs
1/2 c vegetable oil
9 oz carton frozen whipped topping, thawed
8 oz can crushed pineapple, with juice
3.4 oz (4-servings) box instant vanilla pudding
Directions
1. Preheat oven to 350’f degrees. Grease and flour three 9-inch cake pans.
2. In mixing bowl. combine cake mix, mandarin oranges, mandarin orange juice, egg and oil. Beat for 2 minutes with electric mixer. Pour into pans and bake for 20 to 25 minutes or until cake test comes out clean. Cool in pan for 5 minutes, turn out of pans and finish cooling on wire racks.
Icing:
In a mixing bowl, combine whipped topping , pineapple, juice from can and vanilla pudding mix, frost between layers and top of cake.

First of all, I love to cook...not every night, but weekends are the best time to cook. I am a animal lover, especially wildlife. My next vacation would be to South Africa. I am all about substitutions, if a recipe calls for a ingredient there are dozens of ingredients you can substitute for the called-for ingredient. I like summer because I love cooking outdoors, swimming. It's just the fresh air that makes everyone want to get outside and do something. I love the air especially after the rain.... that nothing compares to that.
