INGREDIENTS:

Cooked Ziti
1 big eggplant
Can of tomatoe paste
Can of fire roasted tomatoes
1 can of water
2 cloves of garlic
Salt
Pepper
Italian seasoning
 Onion powder

DIRECTIONS 

Slice the eggplant and then fry in oil in a pan till they are slightyly brown. In a casserole pan that’s sprayed with cooking spray, put a layer of sauce on the bottom, followed with the Ziti and and more sauce. Layer the eggplant then the mozzarella cheese.

Repeat with the ziti, sauce, eggplant, cheese. Cook at about 350 for about 40 minutes or until the cheese is melted on top. All ovens vary in cooking time.

First of all, I love to cook...not every night, but weekends are the best time to cook. I am a animal lover, especially wildlife. My next vacation would be to South Africa. I am all about substitutions, if a recipe calls for a ingredient there are dozens of ingredients you can substitute for the called-for ingredient. I like summer because I love cooking outdoors, swimming. It's just the fresh air that makes everyone want to get outside and do something. I love the air especially after the rain.... that nothing compares to that.
